Gourmet Mushrooms Inc., grows more varieties of organic specialty mushrooms than any other farm in America. We hand-harvest over 10,000 pounds a week, fifty-two weeks a year. Mushrooms are available in flats for food-service and in retail packs for gourmet grocers. In 2006 we introduced the Velvet Pioppini mushroom, a robust new flavor that is more like a wild mushroom. Other current varieties are Trumpet Royale, Brown Clamshell, Alba Clamshell, and Forest Nameko.
