A native of Milan, Chef Andrea Frizzi knows his mushrooms and he is a newfound convert to Gourmet Mushrooms' organic varieties. His favorites are Nebrodini Bianco and Velvet Pioppini.
The motto of his Denver restaurant, Il Posto, is:
"The ingredients make the menu, not the other way around."
